Ingredients:
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 cup ketchup
1 tablespoon mustard
3 to 4 ounces cheddar or mozzarella cheese, cut into small cubes (for stuffing)
Fresh parsley, chopped (optional, for garnish)
Directions:
Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or baking dish.
Mix the Meatloaf Base: In a large bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, salt, pepper, Worcestershire sauce, 1/4 cup of the ketchup, and mustard. Mix until just combined—avoid overmixing for tender meatloaf.
Form the Bites: Take a small amount of the meat mixture (about 2 tablespoons), flatten it slightly in your hand, and place a cube of cheese in the center. Wrap the meat around the cheese and roll it into a ball. Place it into the prepared muffin tin. Repeat with the remaining mixture.
Top with Sauce: In a small bowl, mix the remaining 1/4 cup ketchup with a bit of mustard if desired. Spoon a small amount over each meatloaf bite.
Bake: Bake in the preheated oven for 18–22 minutes, or until the meat is fully cooked (internal temp of 160°F or 71°C) and the tops are slightly caramelized.
Serve: Let cool for 5 minutes before removing from the tin. Garnish with chopped parsley if using, and serve warm. These are perfect as appetizers, snacks, or mini meals!
