Instructions
1. Preheat the oven
Preheat your oven to 400°F (200°C).
Lightly grease a large baking dish and set it aside.
2. Season the chicken
Pat the chicken thighs dry with paper towels.
Season them with the garlic powder, paprika, half of the salt, and black pepper.
Drying the chicken first helps the skin brown much better in the skillet.
3. Sear the chicken
Heat the olive oil in a large skillet over medium-high heat.
Place the chicken thighs in the skillet skin-side down.
Cook for about 4–5 minutes, until the skin is golden and crisp.
Flip the thighs and cook for another 2 minutes, then transfer them to a plate.
They don’t need to be fully cooked yet. They’ll finish cooking in the oven.
4. Cook the mushrooms and onion
Reduce the heat to medium and add the butter to the same skillet.
Add the sliced mushrooms and onion.
Cook for about 4–5 minutes, stirring occasionally, until the vegetables soften and the mushrooms begin to brown.
They’ll pick up all the savory flavor left behind from the chicken.
5. Add the garlic
Stir in the minced garlic.
Cook for about 30 seconds, just until fragrant.
Be careful not to let it burn.
6. Make the cream sauce
Pour in the chicken broth and heavy cream.
Add the Dijon mustard, Italian seasoning, dried thyme, remaining salt, and red pepper flakes if you’re using them.
Stir everything together and let the sauce simmer gently for about 3–4 minutes.
It should begin to thicken slightly and smell wonderfully garlicky.
7. Add the Parmesan
Stir in the grated Parmesan cheese.
Keep stirring until it melts completely and the sauce becomes smooth and creamy.
At this point, the sauce should lightly coat the back of a spoon.
8. Layer the potatoes
Arrange the thinly sliced potatoes evenly across the bottom of the prepared baking dish.
Try to keep the slices fairly even so they cook at the same rate.
9. Add the sauce and chicken
Pour the creamy mushroom sauce over the potatoes.
Spread the mushrooms and onions around so they’re distributed throughout the dish.
Nestle the seared chicken thighs on top, keeping them skin-side up.
Leaving the skin exposed helps it stay crisp while the potatoes cook underneath.
10. Bake
Cover the baking dish loosely with foil.
Bake for 30 minutes.
Remove the foil, then continue baking for another 20–25 minutes.
The potatoes should be tender when pierced with a fork, and the chicken should reach an internal temperature of 165°F (74°C).
11. Brown the top
If you want the chicken skin extra golden and crisp, switch the oven to broil.
Broil for 1–2 minutes, watching closely.
The skin should become beautifully browned without burning.
12. Garnish and serve
Let the dish rest for a few minutes after removing it from the oven.
Sprinkle chopped fresh parsley over the top.
Serve each chicken thigh with a generous portion of potatoes, mushrooms, onions, and plenty of the creamy garlic sauce spooned over everything.
Presentation
This dish already has a beautiful rustic look straight from the oven.
For serving, place one golden chicken thigh on each plate with a generous scoop of creamy potatoes and mushrooms beside it.
Spoon a little extra sauce over the potatoes and around the chicken, but leave some of that crispy skin uncovered.
Finish with chopped parsley for freshness and color. A small sprinkle of Parmesan also works beautifully if you want an extra savory touch.
Since the dish is already rich and filling, a simple green salad, steamed vegetables, or lightly roasted broccoli makes a great side.
